La Villa Hibiscus ( @lavillahibiscus ) is one of the most magical and special events I have ever experienced in St. Martin. I call it an event instead of a restaurant because it’s also a show and you’re watching and experiencing it at the highest level.

Arriving at La Villa Hibiscus

When you first arrive, you are welcomed at the door and invited into a home. You are given a space to relax, have a drink and enjoy the incredible view from a high peak in Pic Paradis. You are free to roam. Walk into the living room and see the wall of spices and seasonings, walk directly into the kitchen if you please. I refused to do this because it feels like you’re entering the dressing room before a Broadway show. The creators are focused and preparing for the next few hours of magic. I did not want to interrupt that process.

When you are ready, take your seat at the table. There is limited seating and it feels incredibly private. You won’t even remember anyone else is there. When you sit, that is notifying the kitchen you’re ready to start your courses.

The menu. You have your choice of a 5, 6, or 7-course meal. Prior to arrival, you have made your choice and provided your dietary restrictions. The menu has been built just for you. You have no idea what’s on it so with every course that arrives you are surprised and excited.

The Chefs at La Villa Hibiscus

The chefs are in the kitchen, with stoic faces. They take this seriously and it’s fascinating to watch through the open window. Every course that comes out has a flavor on it I have never experienced. Each one is more interesting and exciting than the last.

For dessert, one of the guests with me had a dietary restriction so they had a 100% custom dessert created just for them. It’s a yellow globe that looks so pretty you don’t even want to break into it. “It’s so nice to have my dietary restriction allow me to feel special,” they say.

This experience was mind-blowing. It’s like nothing else I’ve ever had before. When the show was over, the chefs came off their stage with smiling faces. You feel the desire to stand up and applaud.

La Villa Hibiscus is an absolute must. It’s the most unique experience not only in SXM but anywhere.

Chef Bastian and his wife, Sabine, invite you to discover their gastronomic tables.
Open every evening from Tuesday to Saturday, and for lunch from Tuesday to Thursday, they are available only by reservation.

The concept is original and unique!

In the evening , we offer at the time of booking, the choice between 3 menus:
Discovery Menu at 100 € / person (excluding drinks)
Gourmet Menu at 150 € / person (excluding drinks)
Prestige Menu at 200 € / person (excluding drinks)

These are gourmet menus in 5, 6 or 7 courses.

At noon , we offer on reservation 1 menu Starter, Main Course, Dessert at 60 € (excluding drinks).

We then ask our customers to list us allergies, intolerances and unwanted foods.

The chef then establishes a personalized menu based on this list, arrivals, seasons and his inspiration. The menus vary from table to table and our customers discover their menu upon arrival.

It is a refined cuisine to be enjoyed in an exclusive and intimate setting. The chef works with exceptional seasonal fresh products that match a selection of prestigious wines from our cellar.

Drone over Baie Rouge St. Martin

Drone over Baie Rouge St. Martin

Baie Rouge is an area of the French Side of St. Martin, an island in the West Indies. This location is within Terres Basses and is home to many of the top-rated, high-end Vacation Rental Villas. A great place to fly a drone over.

Baie Rouge Beach is a free-standing, restaurants free, beautiful beach with a public parking lot. One end of the beach is where the majority of travelers and locals gather to swim and enjoy the warm sun. The other end, while not private by any means, is where many beachfront villas are located.

The beach offers wonderful long walks which can be difficult through the deep sand. This is also a spot for those who are adventurous to explore some of the cliffs and rocks. One area has a hole through the cliffs that can swim through to reach a beautiful and private-esque beach area. (No beaches on the entire island are private.) Swimmers be aware the water can get rough and it should only be attempted by those with the skills or at least life jackets to help them stay afloat.

The hole you can carefully swim through to reach a small beach on the other side.

If you’re looking for an easy to access beach with plenty of parking, this is a great one to stop at. The water can be swam in easily when the weather is right and there is plenty of space to stretch out and not be surrounded by others.

There are no beach chairs, restaurants or bars on this beach at the moment so bring a chair, cooler and snacks.

The Devil’s Hole in St. Martin

THE DEVIL'S HOLE IN ST. MARTIN

The Devil’s Hole (or Trou David as it’s less fun name) in St. Martin is an 80 foot in diameter sinkhole between Baie Rouge and Pointe du Bluffe. The highest peak is around 33 feet. It’s quite an amazing place to see.
I was lucky enough to be visiting the house next to it and was able to experience it from the top and surrounding areas. The public can access the area from the rectangular stone at the lowest point or if you’re feeling frisky, you can swim around to the two holes to access it from the inside.
Many of the island tours will stop by this location. While I was there, I witnessed two different four wheel tours come by as the area is easy to get to with an off-road vehicle. By car, you can access it, but there is more walking involved. And you’ll need to be care with the path to it being a little rocky.

So if you’re looking for an adventure and want to see some natural beauty…this may just be the spot for you. Look up “Trou David” or “David’s Hole” on Google Maps to find the exact location and work out how you’ll visit it. Or if you want to listen to the waves crashing while you sleep, rent the villa on the property. It’s called “Le Mas des Sables” and can be rented through St. Martin Sotheby’s International Realty . You’ll be able to see it in a way not many people can.

Off the Beaten Path in St. martin – Le Belle Creole

If you’re looking for a spot that is off the beaten path in St. Martin and is tourist-free? Then try the little beach area by La Belle Creole near Terres Basses. The water here isn’t exactly the best place to swim with the strong currents and plenty of seaweed, but it’s a great place to layout on the sand. You may even spot a few stingrays swimming around (another reason to be cautious in this water). But it’s a great spot for a little adventure and a change of scenery.

You can even explore the old haunted abandoned resort called Le Belle Creole, if you’re into that kind of thing. This was a resort that was completely damaged after two hurricanes knocked it out. The land is said to be haunted and cursed which is why it hasn’t been able to survive. But it could also be that it’s location is a tough spot for terrible weather.

Off the beaten path in St. Martin

Overall this may not be the spot for you if you’re only on the island for a few days and just want tropical vibes, beach chairs, and easily accessible drinks and food, but if you feel like seeing a new area and exploring a little, I would recommend spending some time out there. One thing I try to remind people is that St. Martin is more than just beaches and bars. There is an entire community of people who call it their home. Many times tourist only see these island in the Caribbean as their playground, but there is a rich history on all of them. Le Belle Creole is one of the many off the beaten path in St. Martin spots.

A Dark Figure on Simpson Bay Beach

A DARK FIGURE ON SIMPSON BAY BEACH

With all of this time spent in the house due to Covid-19, I have had time to go through old photos. Sometimes you find something that you don’t remember seeing at the time. It’s enough to creep you out. I remember taking this photo. I do not remember anyone the dark figure on Simpson Bay Beach with me. Maybe I was too busy looking at the sky. Or maybe I was distracted by the warms waves hitting my feet. But somehow I missed a human being. Or a ghost…Let’s not think about it.

I will often walk beaches alone while working in St. Martin. Whenever you see someone far away walking towards you, it gets a little strange. Like what is this person doing out here? What am I doing out here? They are probably just enjoying the same thing I am. Or are they crazy? Why would a crazy person be out here? But as you get closer there is always a wave and a nod. And all that overthinking is seen. Connecting with someone who was probably thinking about you in the same way. If at all.

We often forget, in our weird digital world, to say hi. Sometimes it can make a world of difference for someone. I know that while I am alone on the island, when a get a hello, it makes me feel seen. It allows me to make even the shortest connection with someone. Being alone all the time can be difficult so it’s nice just to hear someone else’s voice.

Villa Acqua in St. Martin used to be an absolute stunner

Villa Acqua in St. Martin was living on the edge. The views from this villa were absolutely incredible. The house may have been partially destroyed by Hurricane Irma, but the new life that will be given to the property being built there will make it even better.

This villa had an infinity edge pool with a view that destroyed most others. The underwater speakers made it an incredible experience for those who enjoy doing laps, but hate wearing those pesky swimming headphones.

It was a 3 story house with resort like styling and features.

Sadly, due to the location of this property, Hurricane Irma did some mighty nasty damage to it. Luckily, the pool is still together and the new owner of the property is planning on rebuilding around it. It’s going to be stunning.

Many people won’t make the trip over the hill to Anse Marcel, but those who do will always make it again. There is a beautiful and calm beach, wonderful restaurant and beach service. Take an adventure and head over to Anse Marcel beach in St. Martin and try something different.

Villa Avanti in St. Martin

Villa Avanti in St. Martin was an absolutely insane few days of filming. I’m pleased that I was able to take a break from it all and film a few videos for myself. This video was shot using GPS positioning mode on the Phantom 4. It takes time to set it all up but it always ends up being pretty fun and I’ve become faster at it since it’s the only way I can get drone shots of myself.

Not that I’m complaining but…I could probably use some friends the next time I spend a few days in Villa Avanti. There are only so many hours I can walk around blasting music from the Bose speakers, swimming in the beach style entry pool, grilling out using the giant Wolf grill, and getting some sun on one of the many lounge chairs before I start driving myself insane with my own thoughts. This luxury home could have held me and 9 of my friends…how selfish of me to do it alone…
